  • 10 asparagus spears, ends trimmed
  • 1 tablespoon extra virgin olive oil
  • Dash of salt, pepper and garlic powder (or more to taste)


Instructions

  3. Add the cooled beets and remaining hummus ingredients (white kidney beans, tahini, kosher salt, ground pepper, garlic cloves, Thai pepper, and lemon juice) to a food processor. Process on high until the mixture is smooth and creamy.
  4. Store the finished beet hummus in an airtight container in the fridge until ready to use.

Prepare almond crust:

  1. Pre-heat oven to 400F (200°C) and grease an 8-inch tart pan.
  2. In a medium-sized bowl, whisk together the almond flour, nutritional yeast, salt, and garlic powder. Add the large egg and 1 tablespoon of extra virgin olive oil, and use a fork to mix together until a crumbly dough forms.
  3. Press the dough firmly and evenly into the bottom and along the sides of the prepared tart pan. Bake for 10-12 minutes, or until the edges of the crust start to brown lightly.
