Well, hello February! It feels like January stretched on forever, doesn’t it? The festive magic of Christmas seems like a distant memory, but with February finally here, we’re not just a step closer to spring; we’re also on the cusp of Valentine’s Day. This time of year often brings a desire for comforting yet uplifting treats, and this Cinnamon Raisin Chocolate Chickpea Bark perfectly fits that bill, offering a touch of sweetness without any guilt.
For many, Valentine’s Day means special plans, perhaps a romantic dinner out or a cozy evening in. While our tradition typically involves a delightful brunch around the holiday weekend, we prefer to spend the 14th itself at home, preparing a lovely meal and settling in for a movie. It’s our version of a “party animal” evening, and it’s perfectly cherished. No matter your plans, incorporating a thoughtful, homemade treat can elevate the experience.
While the main course for our Valentine’s celebration is still undecided, I can confidently say that this Cinnamon Raisin Chocolate Chickpea Bark will be making an appearance. It’s the ideal “healthy-ish” sweet finish to any meal, offering a satisfying crunch and decadent flavor without the usual sugar overload. Beyond personal enjoyment, this bark also makes for an incredibly thoughtful and charming gift. Simply portion a few pieces into a cellophane bag, tie it with a festive red ribbon, and you have a beautiful, homemade present ready to share with loved ones. It’s a versatile snack that combines health, taste, and gifting appeal.
Why You’ll Love This Cinnamon Raisin Chocolate Chickpea Bark:
-
Packed with Protein and Fiber: Unlike traditional chocolate barks that are often just sugar and fat, this recipe brilliantly incorporates chickpeas and tahini. These plant-based powerhouses contribute a significant amount of protein and dietary fiber, transforming a simple treat into a satisfying and nourishing snack. The protein helps keep you full and energized, while the fiber supports digestive health and can help regulate blood sugar, making this bark a smarter choice for your sweet tooth.
-
Antioxidant Rich Dark Chocolate: Indulge wisely with the benefits of dark chocolate. The dark chocolate in this bark isn’t just for flavor; it’s a fantastic source of antioxidants. These compounds help combat free radicals in the body, supporting overall health and potentially reducing inflammation. Paired with the other wholesome ingredients, you’re getting a small dose of wellness with every delicious bite.
-
Irresistible Texture Contrast: Prepare your taste buds for an exciting textural journey. The star of the show, our crunchy cinnamon roasted chickpeas, offer a delightful crispness that almost resembles tiny cookie pieces, adding an unexpected and satisfying element. This crispiness perfectly complements the soft, chewy texture of the plump raisins, creating a harmonious and addictive bite that makes this bark truly unique and enjoyable.
-
Perfect for Meal Prep and Freezing: Life gets busy, but healthy snacking doesn’t have to be complicated. This chocolate chickpea bark is incredibly freezer-friendly, allowing you to prepare a batch on the weekend and enjoy it throughout the week. Simply grab a piece from the freezer whenever a craving strikes for a convenient, healthy-ish after-dinner treat or a midday pick-me-up. Its excellent shelf life means you’ll always have a wholesome option on hand.
Some Tips for Making Cinnamon Raisin Chocolate Chickpea Bark:
-
Thoroughly Dry Your Chickpeas: For ultimate crispiness, proper drying is key. After rinsing your canned chickpeas, spread them out evenly on a clean dish towel and pat them thoroughly dry. Any residual moisture will prevent them from achieving that coveted crunch in the roasting process, so take a few extra minutes here for the best results.
-
Consider Peeling the Skins (Optional but Recommended): While not strictly necessary, removing the skins from the chickpeas can significantly enhance their crispiness. This little trick, which I learned from my friend Haylie at Our Balanced Bowl, makes a noticeable difference. If you’re pressed for time, you can certainly skip this step, and the chickpeas will still be delicious and crunchy, but for that extra-crispy bite, it’s worth the effort.
-
Easy Skin Removal Method: Peeling the skins is simpler than it sounds! Just place the dried chickpeas between two clean dish towels and gently rub them together. The skins will begin to loosen and come off easily. Dedicate about 5 minutes to this step, and you’ll have perfectly naked chickpeas ready for seasoning and roasting, leading to an even crispier texture.
-
Roasting for Optimal Crunch (Oven vs. Air Fryer): You have two fantastic options for roasting your chickpeas, and I’ve included both methods in the recipe. The air fryer, a tip I picked up from Denise at Sweet Peas and Saffron, is a game-changer for speed and crispiness, delivering perfectly crunchy chickpeas in less time. If an air fryer isn’t available, the oven method also yields excellent results; just be sure to follow the instructions for even roasting.
-
Tahini for a Perfect Bark Consistency: The addition of tahini to the melted dark chocolate is a crucial step that ensures your bark sets up with the ideal “snap” rather than becoming rock-hard and difficult to break or bite. Tahini adds a subtle nutty depth and contributes to the bark’s smooth texture. If tahini isn’t your preference or isn’t available, you can substitute it with almond butter or cashew butter, which will offer a similar softening effect and their own unique flavor notes.

Description
This Cinnamon Raisin Chocolate Chickpea Bark is a revelation for anyone seeking a guilt-free yet utterly delicious treat. It’s ingeniously crafted with crunchy cinnamon-roasted chickpeas, juicy plump raisins, and a luscious dark chocolate base enriched with tahini. Each piece is a symphony of textures and wholesome flavors, offering a satisfying crunch, a chewy sweetness, and the rich depth of dark chocolate, all while being remarkably packed with protein and fiber. It’s the perfect healthy-ish dessert or snack for any time of day!
Ingredients
- 1–540 ml (19 ounce) can of no-salt added chickpeas
- 2 tablespoons coconut sugar
- 1 tablespoon ground cinnamon
- 1 tablespoon maple syrup
- 1 tablespoon extra virgin olive oil
- 1/4 teaspoon sea salt
- 250 gram package dark chocolate chips (70% cacao)
- 1/4 cup tahini
- 1 cup raisins
Instructions
- Drain and rinse chickpeas thoroughly under cold water. For optimal crispiness, roll them out onto a clean dish towel and pat them completely dry. If desired, and for an extra crunchy result, rub the chickpeas between two dish towels until their skins loosen, then remove and discard the skins. This step is optional but highly recommended.
- In a medium-sized bowl, combine the dried chickpeas with coconut sugar, ground cinnamon, maple syrup, extra virgin olive oil, and sea salt. Toss everything together until the chickpeas are evenly and well coated with the flavorful mixture.
- Transfer the seasoned chickpeas to your air fryer basket. Cook them at 300°F (150°C) for 20-25 minutes. Remember to stir or toss the chickpeas halfway through the cooking time to ensure even browning and crispiness. The chickpeas are perfectly done when they have visibly darkened and are completely crispy throughout; if they still feel soft in the middle, continue roasting them for a few more minutes. (Please refer to the notes below for oven roasting instructions if you don’t have an air fryer.)
- In a microwave-safe bowl, combine the dark chocolate chips and tahini. Microwave in three 30-second intervals, stirring thoroughly after each interval, until the chocolate is completely melted and the mixture is smooth and glossy. The tahini helps create a perfectly pliable and less brittle bark.
- Line a baking sheet with parchment paper. Pour the melted chocolate and tahini mixture onto the parchment paper and spread it out into a thin, even layer using an offset spatula. Evenly sprinkle the roasted chickpeas and raisins over the chocolate, gently pressing them down to ensure they adhere well. Place the baking sheet in the freezer for at least one hour, or until the chocolate is completely set and firm. Once firm, break the bark into irregular pieces and store them in an airtight container in the freezer for a quick and satisfying snack anytime.
Notes
- I utilized the Cuisinart AirFryer Convection Oven for roasting the chickpeas in this recipe. Please keep in mind that cooking times and temperatures might require slight adjustments based on the specific make and model of your air fryer to achieve the perfect crispness.
- For those who prefer to roast chickpeas in a traditional oven: pre-heat your oven to 425°F (220°C). Spread the seasoned chickpeas evenly in a single layer on a baking sheet lined with parchment paper. Bake for 30-40 minutes, or until the chickpeas have achieved a dark, crispy exterior. It’s crucial that they are completely crunchy and not soft in the middle; if they are still soft, continue roasting. To ensure even cooking and prevent burning, stir the chickpeas every 10 minutes during the baking process.
