Ingredients

  • 1/2 cup medjool dates, pitted and chopped
  • 3 tbsp hot water
  • 1 tsp vanilla extract
  • 1/2 cup raw sunflower seeds
  • 1/2 cup quinoa flakes
  • 1/4 cup dried tart cherries (unsweetened or sweetened)
  • 1/4 cup sunflower seed butter (or pumpkin seed butter)
  • 2 tbsp maple syrup
  • 1 tbsp unsweetened cocoa
  • 1 tbsp mini dark chocolate chips


Instructions

  1. In a small dish, combine the chopped dates with the hot water and vanilla and let soak for 20-30 minutes. This step is crucial for softening the dates, making them easier to process and ensuring a smooth, sticky mixture that binds all the other ingredients together effectively.
  2. Add the date mixture (including any remaining liquid) to a food processor, along with all the other ingredients, reserving the chocolate chips for later.
