Why Brown the Ground Beef on the Stovetop?
Initially, I wanted to cook the entire recipe in the air fryer, including the ground beef. I considered cooking crumbled ground beef directly in the air fryer basket, but it proved tricky. Then, I tried forming twelve individual mini patties. While they tasted great, the entire process was time-consuming.
Mixing and shaping the patties took longer than expected. Then, air frying them took another 10-12 minutes. Plus, I had to clean the greasy air fryer basket before assembling and air frying the sliders. The total cook time was over 40 minutes!
I wanted a quicker, less messy method. So, I decided to brown the ground beef on the stovetop. This takes only about 6 minutes, significantly faster than shaping and air frying individual patties. And, crucially, there’s no need to clean the air fryer basket before assembling the sliders, shaving precious minutes off the whole process. The result? A complete cook time of about 25 minutes.
Browning the ground beef on the stovetop offers another advantage. Using loose ground beef instead of pre-formed patties allows the melted cheese and burger sauce to seep through every nook and cranny of the slider. It might be a little messy, but the flavor is absolutely worth it!
Ingredient Notes and Substitutions
Let’s take a closer look at the key ingredients for these delectable air fryer sliders and some potential substitutions. You’ll find the complete ingredient list at the end of this post in the recipe card.

- Hawaiian Sweet Rolls: I used a 12-pack of Hawaiian sweet rolls because they are so soft and delicious. However, you can easily substitute other types of mini rolls, such as slider rolls or dinner rolls. Just ensure they are similar in size and softness for the best results.
- Ground Beef: I typically opt for lean ground beef (85/15) or extra lean ground beef (90/10). Using leaner beef helps to minimize excess grease in the air fryer. Feel free to experiment with other ground meats like ground turkey or chicken, but keep in mind that they are leaner and may require a touch of oil during browning.
- Cheddar Cheese: Use real cheddar cheese slices for the best melting and flavor. Avoid using softer, processed cheese slices as they don’t melt as well. For optimal melting, choose full-fat cheddar cheese. While I love cheddar in this recipe, you can also try Swiss, Gouda, or Havarti. Just make sure the cheese slices are thin so they melt quickly and evenly in the air fryer.
- Burger Sauce: This is where you can get creative! My quick burger sauce is a simple blend of mayonnaise, ketchup, sweet green relish, and Dijon mustard. However, you can easily use yellow mustard instead of Dijon, or add a dash of hot sauce for a little heat. For an even quicker option, use your favorite store-bought burger sauce.
- Sesame Seeds: These add a classic cheeseburger touch to the sliders. Sprinkle sesame seeds on top of the rolls before air frying for a beautiful and flavorful topping. If you don’t have sesame seeds on hand, you can omit them or try other toppings like poppy seeds or everything bagel seasoning.

Leanne’s Tips for Recipe Success
Want to make sure your Air Fryer Ground Beef Sliders turn out perfectly every time? Here are my top tips for success:
- Air Fryer Size: These sliders fit snugly in my 5.8-quart air fryer. If you have a smaller air fryer, you may need to air fry the sliders in two batches, or halve the recipe.
- No Foil Needed: To ensure even cooking, don’t cover the sliders with foil. You want the hot air to circulate freely around them.
- Serving Suggestion: Getting the sliders out of the air fryer neatly can be tricky – bits of ground beef sometimes fall out. To minimize this, cut the slab of sliders in half before removing them. Use a spatula to carefully lift each half out of the air fryer and onto a cutting board.
- Cheese Sandwich: Layering cheese on both the top and bottom of the ground beef is key. The melted cheese acts like glue, helping to keep the ground beef neatly contained within the slider.
- Warm Beef is Better: The ground beef should be warm when you add it to the rolls. This helps the cheese melt faster and ensures the sliders are heated through evenly. If you cook the ground beef ahead of time, reheat it slightly before assembling the sliders.

Recipe FAQs
Absolutely! Ground turkey or chicken (or even ground pork) are great substitutes. Just keep in mind that ground turkey and chicken are leaner, so you may want to add a little oil when browning them on the stovetop.
I don’t recommend assembling the sliders in advance, as you want the ground beef to be warm when you assemble them. You can, however, cook the ground beef and prepare the burger sauce ahead of time. When you’re ready to assemble the sliders, simply reheat the ground beef.
Avoid reheating them in the microwave, as the rolls will become soggy. The best way to reheat them is to wrap them in foil and air fry at 400F for about 8 minutes. Wrapping them in foil prevents them from drying out and burning on top. You can also reheat them in the oven wrapped in foil.
