Ingredients

  • 1 1/2 lbs carrots (67 medium carrots)
  • 1 1/2 tablespoons olive oil
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon fine sea salt
  • 1/4 teaspoon ground black pepper
  • chopped fresh parsley for garnish (optional)


Instructions

  1. Peel, wash and thoroughly pat your carrots dry. Slice them into uniform 1-inch pieces. (Cutting them on a diagonal can add a nice aesthetic touch).
  2. Place the sliced carrots in a large bowl and toss generously with the olive oil, Italian seasoning, garlic powder, fine sea salt, and ground black pepper until every piece is evenly coated.
  3. Arrange the seasoned carrots in a single layer in your air fryer basket. Ensure not to overcrowd the basket to allow for proper air circulation and even cooking.
  4. Air fry the carrots at 380°F (195°C) for 12-15 minutes, stopping to shake the basket once or twice during cooking. Continue until they are perfectly fork tender and slightly caramelized around the edges. Serve immediately, garnished with additional salt and pepper, and fresh chopped parsley if desired.

Notes

  1. For the absolute best results, always air fry the carrots in a single layer and be careful not to overcrowd the air fryer basket. You’ll want hot air to circulate freely around each carrot piece so they cook quickly and evenly, achieving that perfect tender-crisp texture.
  2. Cutting the carrots into even sized pieces (approximately 1-inch) is crucial to ensure perfectly even cooking across the entire batch. If you cut the carrots into significantly smaller or bigger sized pieces, you will need to carefully adjust the air frying time accordingly.
  3. To promote consistent browning and cooking on all sides, I highly recommend stopping to vigorously shake the air fryer basket once or twice during the cooking process. This redistributes the carrots for optimal exposure to heat.
  4. This recipe was tested and perfected in a 5.8-quart air fryer. If you have a smaller air fryer and find that the carrots are overlapping, you’ll need to add a few extra minutes to the air frying time and be sure to stop and toss the basket more frequently. Alternatively, you can half the recipe or air fry the carrots in two separate batches to maintain a single layer.
  5. I specifically used dried herbs in this recipe instead of fresh herbs for the main seasoning, as dried herbs coat the carrots much more evenly and hold up better without burning at the high temperatures of the air fryer. Fresh parsley is added as a garnish for freshness.
