Ingredients
- 6 oz dark chocolate, chopped (at least 70% cacao)
- 1 tbsp virgin, cold pressed coconut oil
- 1 cup raw almonds
- 1/2 cup coconut chips
- 2 tbsp uncooked quinoa
- 1 tbsp dried orange peel
- 1 tbsp maple flakes
- 1/2 tsp sea salt
- 1/3 cup raw pumpkin seeds
- 1/4 cup dried cranberries
Instructions
- Add the chopped dark chocolate and virgin, cold-pressed coconut oil to a small saucepan. Melt them gently over very low heat, stirring continuously until the mixture is completely smooth and luscious. (Refer to the notes below for more melting tips).
- Carefully remove the saucepan from the heat. Stir in the raw almonds, coconut chips, uncooked quinoa, dried orange peel, and maple flakes. Ensure all ingredients are evenly coated with the melted chocolate. Once combined, spread the mixture thinly and uniformly onto a baking sheet that has been lined with wax paper or parchment paper. Immediately sprinkle the sea salt, raw pumpkin seeds, and dried cranberries over the top. Gently press these toppings into the chocolate mixture using the back of a spoon to ensure they adhere well.
- Place the baking sheet with the bark into the freezer for approximately 30 minutes, or until the chocolate is completely set and firm. Once solidified, break the bark into irregular pieces of your desired size. - When it comes to melting chocolate, you’ll find many recommendations for using a double boiler or the microwave. Depending on the specific recipe and type of chocolate, I sometimes opt for the microwave, heating in 20-30 second bursts and stirring in between until smooth. This method often works best for chocolate chips. However, for chunks or squares of dark chocolate, I confess I rarely use a double boiler. My go-to method is melting it directly in a saucepan over the absolute lowest heat possible, stirring constantly. While this carries a slight risk of burning, diligent stirring on low heat has always prevented issues for me. That said, please feel free to use your preferred method – be it a double boiler or microwave – to melt the chocolate for this recipe.
- For this particular recipe, I’ve had excellent results using both Baker’s Dark Chocolate (70% cacao) and Laura Secord mini chocolate chips (also 70% cacao). Both varieties performed beautifully, though I found the Laura Secord chips offered a slightly darker, richer, and more intense chocolate flavour, which I personally loved.
